1)将牛肉筋膜剥除掉,片成0.1~0.2厘米厚的薄片,横着肉纹切成5 ~6厘米长的细丝;

2)把芹芽的根、筋、叶择去,洗干净后切成2~3厘米长的段(过粗的劈开);

3)将豆瓣辣椒酱剁成细泥;

4)用旺火烧热炒勺,倒入植物油烧到6~7成热,放入牛肉丝快速煽炒几下,加入盐,再炒至酥脆,肉变成枣红地,再加入豆瓣辣椒酱泥和辣椒粉,再颠炒几下;

5)然后顺次加入白糖、料酒、酱油、味精,翻炒均匀;

6)再加入芹菜、青蒜、姜丝、拌炒几下后,喷点醋颠翻几下盛出,在上面撇上花椒。(文/伊迪文化传播供稿)

Selection

  • Nov. 16th, 2005 at 9:17 AM
People tend to think of selection as a long term effect, using ka/ks >1 as a cutoff, this is somewhat misleading. IMO, the time for selection on a gene is almost instant in a geological time scale, it would make no sense for a selection to act on a gene (purposefully) for tens of million yr without success. The darwinism suggests that the selection is a continuous, linear effort, e.g. the force that acts on the giraffe neck, the force that creates the extreames. These are the exceptions rather than the rules. Most selection works only when the habitat is disrupted (adaptations) that acts almost instantly.

Moreover, if you think about it. Immediately after the selection ka/ks would even be smaller than usual to keep the fruit of selection. And that makes detection even harder.
